Chicken dry roast / Nadan Chicken Ularthiyathu …!!

Hii all..How was your weekend n how is the Wednesday going on for you? Here,summer is almost nearing its end phase n fall is creeping by..n so evenings are kind of chilly now..For me this is the ‘bluest’ Wednesday..:P..After 4 days of fun ,Kutts went to work today n am left to rot alone again..:(..Thanks a bunch again to all those who wished us on our 1st anniversary, in all those social networking sites..It was on Monday n we had tons of fun..All those who are planning to visit Seattle(especially foodies),sooner or later,please don’t skip to visit the Sky City restaurant in Space Needle..That’s where we had our anniversary dinner..n it was too good for words..The restaurant has the most amazing romantic ambience n it revolves slowly,showing you the whole of Seattle n Mount Olympic n all that.We spent 2+ hours n got more than 2 revolutions..saw the sunset n the way the city n sea transforms from evening sparkle to a sexy twilight to a twinkling diamond night..n we thought ,with the high price of food there,it must be all for the views,but when the food came we were in for the sweetest surprise.All the dishes we tasted were par excellence..!!! Each dish carefully n artistically prepared n the taste n flavor just made us go crazy..For main entree,I had a Dungeness crab stuffed gulf shrimp n fettuccine pasta dish n he had a grilled halibut dish.I cant tell more than “amazing” word..Do try this place foodies..:)..n our sweet waitress did some ‘special work’ on our dessert as it was our anniversary dinner..Altogether we had a real lovely evening ..a feast to our eyes,tongue n ..heart..:)

So,that's why I couldn't post on Monday,n after a small break I am in with a non-veg dish.Lately I noticed the absence if chicken here for so long..We buy meat almost every weekend,,either lamb or chicken..but all the time I make it just like that..like how I feel at the moment ..roast or fry or curry ..n mostly I never note the proportion n ingredients n all..That's why no posts recently..So, last weekend when I made,I noted everything n surprisingly the dish tasted different from the usual ones n so I drafted it..:)

Chicken Ularthu

Thats a chicken ‘thigh’ piece you see in the pic..But its kinda hidden as its all coated with the fragrant masala/gravy base sticking to it..:)

Ularthu” or “Ularthiyathu” is a nadan Malayam slang word for Roast or open pan cooking where you make the meat dry fry(Lil water you can see in the pic is from the vapors on the lid).Its most famous in Kottayam areas..n the Christian families there are so famous for this kind of preparation.In school,I had so many Christian friends n one of my close friend used to bring beef n chicken dishes all the time n the surprising fact is each of them tasted different divine..The special was a meat dish ,which ic kind of a thoran..ie,the meat is shredded n mixed with onion n spices n dry fried..I still have the taste on ma tongue..:D..I guess it tastes best with beef..have to try it out sometime..:)..n when I ask her who made all these,she used to say “vallyamachi undakkiyatha..”( my grand mom made it)..just imagine in mind,the image of a sweet n loving elderly lady wearing white chatta n mundu(authentic dress of elderly Christian ladies) n swiftly moving around in kitchen supervising the meen curry in big ‘chatti’(clay pot kadai),n tasting the chicken curry n adding bit of masala’s here n there in 3-4 different kadai’s simmering at the same time..So,I know ,most of you(malayalam readers) may have so many fond memories associated with this one word Ularthu..:).Do share..:).A simple Ularthu is just marinated meat cooked n then dried with onions n spices in an open pan,to an extent where the masala gravy coats the meat n infuses its flavor into it..

Shall we move on to the recipe? I have added some extra ingredients which are not common for a Nadan Ularthu here..But don't worry it just adds to taste ok? :)

Chicken Ularthu

Marinate 1 lbs of Chicken with 2-3 tsp roasted Chilli powder,3-3.5 tsp roasted coriander powder,1 tsp freshly crushed Pepper powder roasted lightly,1/2 tsp Turmeric,1 tsp Garam masala,1 Tbsp soy sauce,2 tsp Vinegar,1 tbsp yogurt,1 stalk of fresh curry leaves n salt.(Roast the chilli,pepper,coriander,garam masala powders in a small pan under low heat n add to the meat).Keep aside for a minimum of 1 hour.

In a wide-bottomed n deep pan add oil ,n heat whole spices(3-4 cloves,2 crushed cardamoms,2 inch stick cinnamon)

Splutter 1 tsp mustard seeds ,1/2 tsp fenugreek seeds n 3-4 broken red chillies.

Throw in a handful of fresh curry leaves n 1/4 cup of coconut slices n fry well till its fragrant n the slices turn golden.Take care of heat ,don’t burn the spices n seeds

Throw in 1 Tbsp minced garlic n 3/4 tbsp julienned ginger n fry till raw smell goes off.

Pop in 2.5 - 3 cups of thinly sliced big onions n sauté till its soft n golden.

Now for lil more heat ,just add 1 – 1.5 of chilli powder n a tsp of fresh ground pepper.Fry well till the spices are coated on the onions.

Now add a chopped tomato n mix well .

After a couple of minutes,add the marinated chicken,salt,sauté n mix well with the base.

When the chicken is no more raw,keep the pan in simmer ,close n let it cook.

After 10-15 minutes,when the chicken is almost cooked ,add a handful of chopped mint n cilantro,mix well n close the pan again to complete cooking.

When the chicken is fully cooked,open the pan,increase heat n keep sautéing well,till the whole thing is dry n the gravy is coated on the pieces.

Towards the end sprinkle 3/4 tsp fresh garam masala on top n mix well..:)

Mash some fresh curry leaves in coconut oil n add it to the pan n mix well

Sprinkle some kasuri methi n more mint n cilantro for added flavor.

Scrummy Chicken ularthu is ready to serve..!!

Verdict: Tastes superb n even more yummy when it sits for a while..The next day I felt it tastes different n more good.Adjust the spices according to your level..Even with 3 tsp chilli powder n pepper powder,we felt the heat was low for us..Marinating the meat with powders,just reduces the spicy kick I guess,because as it sits the spices are absorbed into the meat.That's why I added more spice to the base as well..still,I’ll add bit more of it next time..Mint n cilantro n curry leaves gives it an amazing flavor n I do the final touch with coconut oil which makes the dish truly authentic.This dish is rather easy to prepare as it involves just one pan n lots of sautéing.In short a quick n tasty chicken dish to relieve your craving for home made mom’s chicken dish..:)

Tastes best with plain white rice,Biriyani,Pulav,Naan ,Porotta n Roti's..this goes to Viki's side dish event..:)

Varsha dear!! sounds like you enjoyed a lot & now the empty feeling creeped in after hubby is gone :-(

when we were in Seattle, we got to the needle & had signed up for the sky city for dinner. then prarthana who was 4 months then started getting cranky & tired, it was so late for her & we were at the tail end of the long trip,we cancelled it & climbed up only till the viewing area, saw the sun set over the city & left.. next time for sure - just to sit there & enjoy the view with some drinks.

now send me over the chicken ( I will make some flaky parathas) just the tag won't do:-) Thanks..

chicken roast looks delicious...i make in a similar way..only difference is i use shallots instead of onion, den i wont use kasuri methi and mustard.. i use mustard only in chettinad dishes.. :) snaps are really amazing..by seeing this snap i was thinking about a prawn dish you had posted early..not because of similarities, both are my favorite snaps in your blog.. :)

I cannnot thank you enough for this recipe. I am a beginner cook but was looking for a nadan chicken recipe. I did try another recipe once, but it didnt come out too well. But with this recipe of yours i can finally say confidently i know to make a good chicken dish. For marinating i didnt have the soy sauce or vinegar but i used lemon instead. Also i left some of the gravy in, and it turned out that it was a lovely chicken curry too. Thanks a lot.
