Ricotta – Blueberry Pancakes with Light honey syrup…!!

Hii there..how are you all doing?I know I know..enjoying the last few minutes of Friday with a gleeful anticipation of the nearing bright weekend ..Aint it..:)..Seattle is so bright n beautiful n trust me when I say,it hasn’t rained ever ,even once after we shifted to our new home.Its always so sparkling,the greens around me everywhere,n the blossoms smiling at me,swaying in the light breeze..Now how sweet  n soothing it can be to have this wonderful honey-syrup drizzled Ricotta blueberry pancakes on such a beautiful morning,enjoying all these blessed sceneries'  around us..That's what we exactly experienced today..:)..n Thank you for all you wishes n comments n sweet words on my last post..am glad to share with you all..:)

Being a sucker for spicy food that I am,it is never a different story for breakfasts as well. I always prefer them savory to sweet.So my typical breakfast would be always some toast with eggs or ham,or French toasts with some extra kick of Cayenne etc etc..basically bread made spicy,because I guess bread is the only thing that can be made so for breakfast.So when I bake,I make sure,I do add loads of pepper flakes to my bread to make them savory.But once in a while,Kutts ask for waffles n then sometimes I get lazy n get some oats cooked up with fruits n nuts n so breakfast is all sweet again..But then I never like it too much,personally..n weekends I try to  cook up ,sometimes traditional breakfasts like Puttu –kadala or Appam or something n what a bliss it is(mostly it ends up as a brunch..lol)..That really gives a full feeling..:)..I fee l that our old people were really brainy,when I see our traditional breakfast combo’s.All nutrition's needed to kick start a day royally is crammed up in that 2-3 items..For eg: Dosa (Rice-dal crepes) + Coconut chutney/Sambar(Dal cooked with veggies n spices) n a glass of milk n one banana for breakfast n your body just got half of the full nutrients you need for a day..Same with Puttu –Kadala( Steamed Rice flour-coconut mix n chick peas curry) n all other breakfasts..Isn't that just great?But it only needs some expertise n time management too cook up all those which, compared to our daily breakfasts,are really  some task .Kudos to our Mom’s once again..:)

So..so I was talking about how most of us like savory breakfasts,but these pancakes are sure to catch you off,as it did for me.They are soft n fluffy n melts in your mouth.Few weeks back I made some Oats strawberry pancake,but didn't feel anything special about it and that why I never posted it  here.But couple of days back when I saw Gaida making this pancakes ,I was so intrigued n just on shot of the consistency n silky texture of the batter n I was sure that I am gonna try this.Last post I told you all how I like her show,Every day Italian in Food Network, n my my..I fell off ma couch LMAO seeing some of the comments .Well..gals..I cant say I totally disagree..:D..She is really sexy n cute.Mainly I like the deft of her hand.I guess I haven't seen anyone cooking so adeptly n her hands just does everything perfect…plus her bright presence n genuine passion for cooking is all obvious in her shows.always excited n cheerful she is...That's what I feel..:D..n I like Rachel,Bobby n Paula too.:)..But my serious doubt about Gaida is how she manages to stay so slim n small,even after taking in all those stuffs..D.I seriously get an attack every time I see her throwing in bars of butter n cheese...arhh..n I secretly tried to imitate her(not in attire,S n S please spare me..ok?.:D) ,when I was alone in kitchen yesterday,n my garlic went flying in air n post-cooking my kitchen floor had all the genuine traces of what I cooked there..:D..You can see her daily shows at 12 30 noon in FN..:)

So here is Gaida’s Ricotta-Blueberry pancakes,look how pretty they are..:)..Its darn easy ,quick n yum..perfect for you breakfast..:)..Ricotta  cheese is the star ingredient in this pancake which makes them moist n rich n soft..!

In 3/4 cup of water dissolve 1 tsp of Pure vanilla extract.

Add this to 1 cup of Pancake mix( I used Organic Private Selection) and mix with a wire whisk.It’ll be kind of lumpy.

Sprinkle a pinch of salt.

Now add about 3/4 cup of Ricotta cheese(at room temperature) to the batter n whisk again into a smooth batter.It will be kind of thick n you can thin it with milk/water if you wish.

Gently fold in  1/2 cup of frozen blue berries .Frozen is used because that way the berries wont break too much n go gooey in the batter,

Take small ladle full an pour,n flatten slightly on buttered pan 2-3 in one batch.It’ll spread a bit on its own.

Cook each side for couple of minutes n flip n brown the other side.

Yummy Ricotta pancakes are ready.

For light honey syrup just warm some 1/4 cup of water n dissolve a tbsp of sugar in it.then pour 1/2 cup of honey into it n simmer for a while.

Drizzle this over your pancakes n enjoy your gorgeous mornings..!!:)

Ha ha I always wonder the same how she looks so skinny after eating the cheese and butter dessert. Ouch, she may just taste acting for the TV shot!
I like Bobby but i don't much stick to any shows!

That pancake is really looking so wonderful and as a fan giada me too tried some of her recipes. Everyone in FN are so professional giada's is so so professional and i too love the way she does even the hard things to simple one. Like the way she gives the brief abt each dish.. Ok ok this is varshas blog coming to pancake the pictures are asusual good and the basket backround looking so casual.. liked that way.I am inviting myself to have that pancake. Hope u dont mind...

You have become a professional in photography and maybe if you write one more post praising Gaida; I am sure she will hire you as her photographer.
Ha now about Gaida and her kitchen antics well my dear, if food network will give me a 7 figure check every month I promise you I can stretch my mouth till my ears and throw garlic, ginger, chicken and the pot in air while my assistants keep themselves busy cleaning up the mess I make :)

Ah the min I saw the title I knew I had seen it somewhere!! Someone asked her how she stayed so thin in spite of all the fat "Giggle..americans don't know portion control giggle..giggle..in Italy we know when to stop giggle" Seriously this was her response. And its very true. Pasta in the American restaurant is 50% more than what they serve in Italy- I saw this on some show. So there now you have the answers. Every tho' Giada makes them she exercises portion control. Yea she is a very bright personality- you don't even need lighting in the room shes in, the min she shows her (which is v often) there is enough light to brighten the whole studio.
You ought to write to her and become friends then we can see you on her show!!
Anyways, the 'stack' looks lovely! Hope you exercise portion control :P

Oh they look so fluffy and that stack is irressistible. My daughter likes pancakes so I make them often must try this ricotta version - nice way to add some proteins as well.

Honestly there is only so much of giada that I can take but some of her recipes are good. My fav at the Food network is alton brown. The pancakes look gorgeous.

Hi Varsha, those are some lovely pancakes, I love Giada too, especially the way she pronounces the authentic Italian dishes names. Do u know how Ricotta is pronounced? Ri-co-tthha ;)) . I have always wondered how she stays slim, then I heard somewhere Italy doesn't have much obese people and they manage to stay in shape !

It's still sunny & gorgeous in Seattle?? *sigh* ... miss it!! And yes, I totally have no idea how Giada stays so slim .. even after shez had a baby, for crying out loud! Ricotta pancakes are my favs ... I think I like them even better than buttermilk ones. Yours look delish!
