Yummilicious Chicken Tikka Pizza...!!!

Hii ..Hello..I am back on this beautiful Wednesday, with the the pizza I promised you all.. Its not bright like yesterday, but still its spring smiling everywhere..n am loving it..:)

Ok..Leme cut the slack n shoot the apple straight today ..:)
I don't remember the first time ,I tasted a pizza. But the memories associated with the word are mostly of my Pune days. Those times, when I was a total careless free bird, staying far away from home, having blast with pals, enjoying my proudly earned money at such a young age..It was a total different experience n yes except some real tough times n pressure at work place,I would say I enjoyed it greatly.I never seemed to get along with the food there ,n we never used to cook in the beginning too.So we all were highly dependent on all sorts of junks…n there was this Mc D's near by our place..n most of the weekends we would go there. It was a kinda mall, with a Multiplex, brand shops,n various famous eatery nooks scattered around.A true fun place n youngster's vista.I used to have mainly burger's from there.Never seemed to like Pizza much.Once I had ordered an expensive pizza from Domino's n got depressed as it tasted weird. So that experience made me keep a safe distance from it.But later on, I liked the Mc' D one's n also some other shop brand's like Pizza Hut too. But still It was neva my favorite..!!

And as if to complete the story, my better half seemed to have a strong dislike for it as well.He says he is pissed off of Pizza, having it all the time during his bachelor days..;p.So we never really ventured out to have this thing during any of our eat-out's..but then one day I suddenly got a craving ,n I knew I would never be able to make him eat one from outside, or he would buy me this big one n ask me to finish it..So I started browsing like crazy for a fool - proof recipe. No chance for a trial. It has GOT to be perfect..!! I didn't want to waste all those flour ,n veggies n cheese n chicken..!!

Finally I got a few of them in my hand for the base n toppings was my choice, especially to make those tikka's n spread them over. Preety had a veg pizza recipe which I found useful along with some other sites like elise.com ..Thanks to all of them..:).. My pizza came out perfect n super-yum,n even Kutts was amazed to see it n had a lot of slices..It was for dinner I baked n so the pics didn't do any justice to the original ones.It was so pretty to see and anyone would want to jump for it. So,I clicked a few pics next day ,with some left over slices.

I have used White Bread flour for this.Thats the perfect one.I dunno if AP flour will work as well. You can make it a healthy Whole wheat Pizza with wheat flour. But then it would be hardly airy,n would have a draker shade.Crust would mostly ressemble a Naan.Well, that pays for the health factor I guess..:D..My crust was so soft n gorgeous n light with so many generous air pockets all around .As I made a single pizza with the whole dough ,the crust is slightly thick. But nevertheless it was super soft n fluffy. You can make two thin small ones out of it as well.

For Pizza base:

Dissolve 1 Tbsp Active dry yeast in 1 cup warm water and keep it aside to rise, some 10-15 mins.

After that about 2 Tbsp of olive oil, 1.5 tsp of salt n about 1 tsp of sugar to it and stir lightly.

Take 3 cups of flour ,make a well in the centre n pour the wet ingredients n gently stir to combine.

Now knead it to a soft pilable dough. It takes some 15 mins or so.

Take a large bowl, oil it and flip the dough ball in it to cover and keep aside for an hour in a slighlty preheated oven or any warm place like that to double.

After an hour, take it out ,place on a clean working surface. You can either divide it into two or work on it for one large pizza.Punch down and flatten into a thick disc shape.Pinch the edges if you want a lip there.(With 3 cups of flour you can make 2 small thin crust Pizza's or 1 large slightly thick one like mine.)

Smear some oil on the baking sheet and place the dough on it and let it rest for some 20 mins.
In that one hour when the dough doubles, you can chop n arrange the veggies n make the tikka fry.

Making Tikka's:

Clean n chop about 1/2 lbs of chicken lengthwise into thin pieces.

Marinate it with 1-2 tsp Chilli powder,1/2 -1 tsp Pepper powder,1/4 tsp Cumin powder,1/2 tsp Garam masala,2 tsp Tomato sauce,1 Tbsp yogurt,2 Tbsp lime juice,Kasuri Methi n salt.

Refrigerate it for overnight or atleast an hour or two.

Shallow fry it in lil oil, till all sides are lightly blackened or you can deep fry /bake it as well..I found fried ones taste better than the baked.

Dont over fry as they are to be baked later on pizza top.
_______________________________________________________________

Aranging the toppings:
Preheat the oven to 450 F.

Now take the flat pizza dough. It might have rised again after the 20 mins.My yeast was pretty active n I could see the bubbles rising prettily even when I was trying to knuckle it down.

So punch it down again lightly and smear some olive oil over it,so as not to make the dough soaked with sauce n toppings.
Now smear a sauce of your choice over it.It can be a tomato paste or sauce or a herb-tomato topping.I used a tomato-basil pasta sauce.
Now sprinkle some shredded cheese over it.I used a sharp cheddar+pepper jack .

Now sprinkle some chopped onions n multi colored Bell peppers n the fried tikka's.You can use any veggie of your choice like olives n all.
Sprinkle some more cheese on top.

A look before baking:

Now place the pan in the lower rack n bake for15 mins. You can even add some more cheese on top toward the end..
Super-delicious pizza is ready to munch on..!! :)

Its easy to cut n use,if you have a pizza wheel .I had to use a regular knife,so its uneven as you see..:P..But whatever it was so yummy n it was hard to stop indulging in it..:)

Its not tough or complex as it may sound, you can prepare it easily n apparently would be glad that you did..!!!

Have a great day..hugs..:)

What a mix of lively colors, and chicken tikka along with pizza long time ago stole my heart! Now you left me between two lovers, Varsha!

Paul said...

As Homer Simpson would say, "Mmmmm... Chicken Tikka Pizza!"

I just ate dinner, or I would be running to the nearest Indian restaurant for chicken tikka to put on some kind of flatbread.

Good Indian flatbread of any kind beats Domino or Pizza Hut crust! I think most pizza lovers would agree, unless they never had real pizza and didn't know any better.

Another way to do it would be to put it on pasta instead.
