Savory Rosemary - Cheddar Bread...!!!

Heylooons one n all..Hope you all had a blast on weekend..:) We had lots of sun on Sunday,though a chill wind was blowing hard all the time.It was so good to see the bright n warm sun after so long time.. :).. We went to downtown , aquarium n Pike Place Market.Roamed all through the town like nomads,exploring every nook n corner n climbing every step of Seattle downtown..:P..Whole town was bright n pretty with all sorts of colors everywhere..n people enjoying n basking in sun.All had happy faces n were apparently enjoying the long awaited sun.. :)

Actually we had this big map of whole Seattle,n was following it n going to all places,amidst of which,we lost our way several times.But that never really matters ,as there is something or the other to see everywhere..:) Aquarium was so superb n I got to touch n feel some Star fishes n soft n slimy Sea Urchins n spiky fishes..There were so many other interesting n gorgeous things to see n by the end of it,we were like tired of pretty fishes..he he..:p ..The day was so hectic,n by evening all our limbs n legs were aching hard n eyes all tired.On reaching home,we just slumbered into bed..Aaaahh..Thus ended a busy fun day.Two days I took complete break from Blog,n now my reader is like overflowing with more than 50 posts.I am still so tired n feeling sleepy..Yawwwn..Sorry dears...I'll definitely catch up with you all,but do give me some time.. :)

Rosemary Cheddar Bread

..So as I promised here is my Savory Rosemary Cheddar Bread..To be honest,this is the best bread I have ever tasted in my life.Not only among the ones I have baked(This is just my 3rd bread..),but also out of all the ones I have tasted from shops n restaurants..I got the essential nudge to bake this from Ashakka's Asiago loaves. I was so tempted by the intriguing combination of cheese n aromatic herbs.Thanks Ashakka..
I always prefer spicy n savory food to sweet stuffs..So last week,I got hold of some Rosemary,(about which I have ranted in my last post) n combined it with some Cheddar n pepper flakes and baked this bread,n it turned out to be super yummy.. :)..Usually our bread lasts for a week.But this one was finished in 4 days..I made a Broccoli soup (coming soon..:).. )n this bread croutons soaked in the warm,creamy soup tasted heavenly..:)

Rosemary Cheddar Bread

This time,unlike my usual Fully Whole wheat bread,I have added a little of AP n white Bread flour to this one,to make it slightly light n airy.But there is lotsa WW n Oat meal n nuts n grains in this..So No worries.. :)

You need:

1.5 cups Whole wheat flour

1 Cup White Bread flour

1/2 cup AP flour

1/2 cup Oat meal(If you find the flour mix not comfortably dry,add some more oat meal..I dint have to,though)

2-3 Tbsp of Minced Garlic

1 Tbsp or more of Chilli Pepper Flakes as per you like

1/2 cup Shredded Cheddar n some more to sprinkle on top (Use any cheese which is not too moist)

A bunch of Fresh Rosemary leaves (Adjust the quantity as per your taste n liking)

1/2 tsp baking soda

1/3 cup milk

1 Tbsp honey

1/2 cup warm water

1/2 cup Sour Cream

1 1/4 teaspoons salt

1/4 cup Olive oil

1/3 cup of a mix of Flax ,sunflower n Sesame seeds(optional)

1/4 cup of crumbled Walnuts(optional)

1 packet dry yeast(I used Fleichmann's Extra rise Active dry yeast)

Rosemary Cheddar Bread


In a large bowl combine water n sour cream n MW water for 40 secs.You finger should be comfortable when inserted in the mix.Thats the level of hotness we need.

Add yeast and keep it aside till it foams.Some 10 mins..Fleichmanns active dry yeast foams fast.

After that add the milk,honey,salt and olive oil into it and stir lightly .

Meanwhile,heat some olive oil and add minced garlic.Saute well till raw smell goes.Switch off heat and add chilli pepper flakes and mix well.

Sift/mix flours,baking soda,seeds n nuts n craisins, and the garlic-pepper mix and combine.

Make a well in the centre,and add the wet mix and stir until combined into a sticky mass.

Take it out and keep it on a clean work surface and knead it for 6-10 minutes to form a smooth dough.

Flatten it slightly n add a mix of cheese n rosemary on the center.Roll again to cover n knead for few minutes.

Oil the large bowl ,put the dough inside n flip to cover all sides of the dough with oil.

Cover it with a paper towel,and keep it aside for an hour to double.In cold countries,keep it inside a slightly preheated oven or oven with the inside light on.

After an hour take the doubled dough and lightly knead ,divide into two balls.

Place it in a greased parchment paper inside the loaf pan.Keep it back inside the lit oven for an hour or more ,until the dough doubles again.

Make gashes on top of the balls,sprinkle some cheddar n pepper flakes over it.

Now preheat the oven to 350 F n bake the bread for 35-40 mins.(it took me only 35 minutes)

To check if the bread is set,knock it on the bottom side .It should sound hollow.(Dont over bake)

Take the bread outside and butter the outside crust to prevent it from going hard.

Cool it slightly,cut into slices and indulge.. !!


3.5 cups of all the flours gave me 2 yummy aromatic breads.Adjust the quantity as per your need.. :)

I added lil more chilli pepper flakes during kneading to give a kick.

Always use minced ginger,not paste.Its yum to get the bites in between.

The bread was light n slightly airy ,even though I added 1.5 cups of WW flour.If you want it more light n with lots airpockets,increase the amount of AP flour,compromising the health part a bit.

We had a yummy breakfast the next day , with some french toasts made out of it.. :)

Chemmeen Theeyal..(Prawns cooked in a Roasted Coconut-Masala Gravy..)..!!!

Hi dear friends..Weekend is here..Now,I dont want to rant n sulk about the weather here anymore.Seattle is a pretty place n there is lotsa fun n festivals waiting for us in April.(I am trying to see the bright sides ..u knw..:P)..It was sunny yesterday,n dull today..I am hoping for the best on weekends.. :)

Two things that pop up in my mind right now,are stuffs at two extremes..:P..I'll better tell that separately..:P.I know..I have always been blamed n often make people bemused ,with this unnatural mental capability to think of most unrelated things together or in rapid succession.Sometimes he'll be telling about something,I'll retort to it n suddenly I'll ask about a thing,completely from another world..n he'll like now from where in the world did u link that..:P..Serious digression..Sleepy mind..Now..these two are not really unrelated..:D

So..the first thing is I am now in love with Marley n me..For my last post,I got many comments from you guys,most of you, who are in my same boat.Like they say,kids are adorable when not ours(:-P) ,most of us think its good to see pups n dogs from a safe distance..:D..I told you about Motu ,rite?my old pet dog at home..I hated him from that point of time,when he brutally strangled n assassinated my pet baby chicken Bikki.Yeah..I used to raise baby chickens..was very fond of 'em.I have fed n brought up almost 14 chickens from my palm size to big, fat n fighting lads..I used to adore these colored chickens ,being sold in big baskets by street sellers..n me n my bro used to take them out for walks n feed 'em..cute no..n at some point of time,after they become big,they'd all die..n I used to cry buckets..So coming back,one day Motu strangled Bikki ,I hated him so much n even beat him with a hose pipe..Since then I never thought good of dog's..Now Marley is forcing me to like him.. :) All of you have not read it yet,do give it a try once..:)

Second thing is I am in love with the herb Rosemary.I never used to buy much of herbs,as its costly plus it rots soon.After one use or so,I may not find an immediate use,as I don m ake much of soups n stuffs that require lotsa herbs.So it just used to rot.But the other day when I decided to bake a herb cheese bread,I thought of those pretty stacks Rosemary-Olive oil French bread n grabbed a pack..n boy..Aint I so glad that I did?Am now in total love with it,that I dread I may gulp it just like that..The bread recipe ,you'll get to see next week.Rosemary made my day n my bread.It was so flavorful ,n the mild n soothing aroma is to die for.. :)

Lemme come to todays recipe..Its the good old Theeyal ,authentic n traditional dish of Kerala kitchen.When I started blogging,many mailed n commented me asking to post this one..I couldn't really make it yet...sorry for that..n here am with it now..Its another one of my fav prawn/shrimp dishes n I can eat one load of rice ,just with this curry..:)..Taste definitely varies a bit with prawns available here.But am so so fond of it n makes it often. :)
Update: Veggie pals ..just add plain shallots instead of prawns..n thats the famous Ulli Theeyal..:)

You need to:

Cook cleaned 1 Lbs Prawns/shrimp with 3-4 drumsticks,4-5 slit Green chillies,1/2 cup Sliced onions,1 tsp Turmeric Powder and enough salt in just enough water ,some 1 inch above the prawns.

When the water is bit dried and prawns turn pink,pour in tamarind juice(from a small ball of tamarind,add some initially n keep on adding until u reach your desired tangy level.The more its tangy,more it tastes good..for me I love it that way) and 4-5 cubed chunks of Tomato.Let it simmer for a while.

Meanwhile take a pan ,pour oil n add 1/4 tsp Fennel,1 minced garlic clove, 2-3 sliced shallots(onions can be used,but shallot tastes best..Don add too much,the roasted taste will be diluted) , a 1 inch piece of ginger minced,and a few curry leaves.Saute well.

Now add 1 cup of fresh grated coconut and saute continuously.(Dont move or it'll be charred..:P)

When it turns a shade of dark golden brown, throw in 2-3 tsp of Chilli powder,2 tsp Coiander powder,1/2 tsp Pepper powder n 1/4-1/2 tsp garam masala(make fresh with fennel,star anise,cinnamon,cloves,cardamom).

Switch off the heat n saute to mix well,till the whole things is dark brown(remove from heat,else itl be charred to give a bitter taste).

Keep aside to cool n the blend it in a mixer for 2-3 runs without any water,n after that add very little water n blend to make a paste.

Meanwhile the prawns will be cooked,add a pinch of hing(Asaofetida) to it,and after a minute add the ground masala paste to it,stir and simmer for 4-5 mins.

Do a taste test,add more salt ot tamarind juice and let it simmer for 5 more minutes,under low heat..Keep stirring in between.

Now heat oil in pan,throw in 2 tsp Mustard seeds,1 tsp fenugreek seed,1/4 cup coconut slices,4 -5 broken dry red chillies,lotsa chopped shallots(no onions) n curry leaves.Saute well n fry it..

Pour this over the curry,mix once..close immediately n let it rest for an hour or so before attacking..:D

The color of the dish varies from a golden brown to dark brown depending on how much you have fried your coconut.. :)


Don't over cook prawns,or you'll get a rubbery thing.

Dont let the coconut paste gravy boil for long.It'll become watery n lose the thick consistency.

Dont add too much of onions while grinding the paste.It'll loose color n flavor.

This dish is a real Nadan Kerala one with lotsa flavors to tickle your taste buds..If you say in Nadan language..nalla erivum puliyum ulla curry..So dont be stingy with spices..Give it some good heat n tangy kick..Both will be nicely blended.n you wont feel like killing spicy or something..:)

This dish might need some practice,because you have to get familiar to that level of browning the coconut n amount of spices to add to it n all,besides as I told there is always a risk of getting it charred.So this one demands your full attention..:P

Chakkakuru Poriyal/mezhukkkupuratti (Stir fried Jack Fruit seeds)..!!!

I am not cooking or photographing anything since long..This is a draft n I have 2 more too..I am seriously scared,I'll be empty soon.. :( Guess I am running into some damn hibernation mode.I actually need a break,not only from blogspot,but from the laptop itself.But as of now,this being the only thing I got to do n enjoy doing,I am staying.. :)

I have started to read Marley n me..Since then,I am getting all sorts of dog,puppy n poop dreams.. :D The book slowly n unknowingly transforms you into a dog lover I guess.Have I told that I am scared of dogs??But puppies look so cute to me..So are all the baby forms it humans or animals..If only they didn't grow up into big,fat n frothing creatures with sharp fangs..eeks..I hate to see them salivating..Gosh..Hope I dint hurt the feelings on any dog lover here.Actually we had a pet dog at home when we were kids.I was not really attached or something to it as I was kinda scared,even though we raised it since it was a puppy.He had the most mismatching n unrealistic name ever..His name was Motu(fat in Hindi) n he was stick-slim.He used to gobble up everything,but never really made it to his body.But he was a great dog,never pooped or peed anywhere other than in his intended toilet,n barked throats out at strangers.He got sick n passed away long back. :( ..That's one other reason why we never had n still don't have any pets.When they pass away,it gives a sharp n not-so-easy-to-fade pain in heart..n me being a very sensitive person will go into utter depression if it happens..:) Else I had this fancy for small birdies n rabbits all the time..We are all good with Pappu now.. :P

I have been giving you all live commentary about Seattle weather all the time..So without any fail,this time too..Its sick cold n raining now,bit bright though.I am seriously jealous n frowning about people who are having picnic spread romantic dinners outside,especially on river sides..
Now you know who you are..wink wink .. :D

Coming to recipe,I guess all Keralites are very familiar about Chakkakuru aka Jack fruit seed.It is a much loved n craved-for food in Kerala.Jack fruit itslef is such a yum fruit n my fav too..I never could get enough of it.Both my mom's n dad's home had many Plavu( Jackfruit tree) there,n so I used to just wait for the season to make the whole area surprisingly fragrant with Jack fruits scattered all arounfd.The tricky part is to pluck the ripe jack fruits.If you miss to pluck it at time,the ripe ones would fall off on ground with loud thuds,n that area of the fruit will get squashed n wasted off.So usually,one person would be atop plucking,n the other would wait down to take the catch,if ever the thing falls down. :P..n cutting n taking the fruits out of it is also a painful process.I remember my mom/aunts would sit on floor with papers spread all around,cutting with big sharp knifes and taking out the deep yellow yummy flesh.. :)After devouring the whole thing,we would take out the seeds ,clean n dry it to make the most yummy dishes with it.You can make poriyals/mezhukkupurattis(stir fry) or side dishes combo-ing it with prawns n Kaya's,or with spinach n dal..or...the list has so many n just the sound of it will make most Malayali's drool like anything.I remember Ann posting the combo-with-prawns dish I mentioned.But my most favorite is this simple spicy n crispy stir fry.I used to make mom,prepare this almost everyday during season.I would just snack it like that,n a major portion would disappear before making it to table..: P Back at home,the biggest pain was to skin n chop these seeds.It's got a real hard skin n I remember once getting my finger cut very badly,while trying to skin them.Ha..One of the bliss's of being an NRI,you get everything frozen n life is easier.I never had a clue that they got this thing here.So when I noted the packet in the frozen food aisle,I was literally bouncing with joy.Was quite apprehensive about the taste,as I am not so fond of even the word "frozen".Yeah..I got frozen Khoorka's(Chinese Potato) too..(Do I see anyone drooling big time,wetting all their screens there?? :D).So I made this,n it came out rather good.Almost like how it used to back at home.Only thing is I am pretty stingy about oil,so it wont look like those super crisp fried ones..But they WERE really crispy n yummm.. :)

You need:

1 cup Cooked Jack fruit seeds(I used frozen ones)

1/2 cup sliced Onions

3 Slit Green Chillies

1/2 tsp Turmeric Powder

1 Tsp Chilli Powder

Curry Leaves



Pour some oil in the frying pan and throw in Curry leaves n Jack fruit seeds.

Sprinkle salt and Turmeric Powder,keep on sauteing in between ,until the seeds are lightly browned n firm.

Now add the slitted green chillies and onions and mix n fry well.Instead of popping in tons of oil in the start,keep on adding it lil by lil,whenever you feel the pan is too dry.

Keep on sauteing and frying the seeds n onions.

Half way through the cooking sprinkle the Chilli Powder and mix and fry well for sometime,until the whole thing looks crispy n fried nicely.When the seeds are browned n crisp and onions are lil charred,switch off,that's the state we need..!!

This post is dedicated to Sakshi,who I see, is wetting her screen so much now,n haven't had any luck with finding the treasure of this Kerala Kuru's( her Non-mallu hubby quotes it..!!) yet.Gal..I hope your detector does wonders next time,n you dig out all the KK's of Bostons.. :D:D

Healthy Oats-Nuts bar...!!!

PS: My feeds are still crawling slow, big time..:(..So,for all my regular readers,I do post mostly on alternate days..So even if you dont get my feed,hay am here :P..n pls do check here on alternate days..thanks..:) back after a reasonably nice weekend.. :).. Seattle has finally decided to take a better walk I guess..Ofcourse,who could possibly push away sporty spring for long.. :P It didn't rain much,even though sun was not really gracious upon us...t was bit cold too..But we went for small walks,n park was not really blooming everywhere,just lil frosty even now.There was hand ball n foot ball games going on..n was fun to see kids playing around.We too joined the lot n cheered them.So we were thinking about this and instantly told each other the same thing.When the kids were playing in the field,of course not a big game just a fun stuff,the parents were standing there and encouraging n cheering them like anything.It was so good to watch them full of zest n love.We were telling,how would parents out there in our place will behave in such a situation.Will they really clap n cheer for their kids,for such fun games..?..I have seen n heard about parents pressurizing their kids so much n yelling at them all the time ""..Luckily I never got into such pathos state,may be because I was good in studies n they never really had to get bothered or something.But I have seen so many n its really sad to see the kids chanting like caged birds all the time.Some even have bigger n heavier-than-them glasses fitted upon their tiny noses,n its such a pain to see it.Unless n until the thing is about some big n proffessional games,parents never seems to enjoy watching their kids playing around.I wish they saw all these,n understand how it helps to build a better person out of their kid,rather than being an all-laze sulking lad.. :)

Then we took some historic romantic movies, Pretty Woman n Wedding I love these movies..Drew Barrymoore is the cutest thing on earth..Sad she got into the ugly track.Do you guys love this song of Wedding Singer as much as I do? Sandler is someone I adored since I saw 50 first days,one of my fav movie(a must see for all romantic's out there..!!).. :).Have u seen Wedding Singer?I just loved his face,when his sis told him Linda is not coming n he is on the verge of a heart-wrenching sob.Damn good guy he is..!! n oh Pretty Woman..Guess its better ,I keep mum..JR..Hats off..!! ..n good news is ,from my good-for-nothing Library outlet nearby,I managed to dig out of dust,Marlo n Me..Aint it cool?I really think its a great page-turner n will bring back the long lost reading habit to me.I got another one calles The Lie too,dunno how its gonna be tho..Just liked the writing style of the first page,very open..err..rather verrrryyy open,cos I got to see f's,more than I can count with my hand n toe finger's, after a quick glance.. .. :D

Coming to the beautiful bars(I guess they are.. :P),I have always ranted about my dilemma for breakfast stuffs,n here is one more solution to it.Since I started baking,it was not big fuss,as I used to bake a bread every week which used to last us for 5 days,and rest 2 days or more for fancy traditional breakfasts.But some weeks(last 3 weeks.. :D),I got really cranky n lazy n didn't bake at all..I don't like quick breads..It has always got to be the fancy yeast breads.The sight of the doubled dough gives me so much delight n satisfaction,n that's the best part of baking.So i wouldn't want to waste that,so didn't bake at all..n last week I saw this in Good HouseKeeping magazine ,n that gave me the final nudge to go for it.I had already seen it in so many spaces n mags,like for say Yasmeen's bars are the first one I remember out of the lot.Was thinking of it from then on,but you know I am quite forgetful.. :(..So this page of GHK,made someone whisper in my mind."Come on..Its now or never.." :p..It was 8 at night,when I jumped out of couch,whisked,scrapped n baked n by 9 I had the fragrant bars n by the time we went to sleep,I had enough to fill a big air tight box.

This is your good old Oats made extra nutritious with some honey ,flour,nuts n fruits to make a complete breakfast with a glass of milk,n mebe a slice of fruit.Safe in air tight box for up to 2 weeks ,n for breakfast if u like it warm,pop 2 in a MW for 30 secs n voila..u got them nice n fresh again.. :)..Yeah..I have made some adjustments,of course for good here..Hope you all like n try this.. :)..Even this is the best evening snack,you could pack up for your kids.They gonna love it as well,n you will be happy n relieved that you made them eat something really really good.. :)

You need :
  • 1/2 cup vegetable oil(I used olive oil + butter to make it 1/2 cup.Butter gives a nice texture)
  • 1/2 cup honey
  • 2 tsp vanilla extract
  • 1 large egg (Veggie pals,u can go for Flax meal..)
  • 2 cup old-fashioned oats, uncooked
  • 3/4 cup all-purpose flour(I used 1/2 cup Whole wheat +1/4 cup AP flour)
  • 1/2 cup (packed) light brown sugar(white sugar is also fine..brown just gives a better moist touch)
  • 1 cup sliced almonds+walnuts +craisins(I popped in some bittersweet chocolate chips too..;) )
  • 1/2 cup toasted wheat germ(I din have it,so added more WW flour n some flax seeds)
  • 3/4 tsp salt

Directions Preheat oven to 350 degrees F. Line 13" by 9" metal baking pan with nonstick foil (if not using nonstick, lightly grease foil).

In liquid measuring cup, stir oil, honey, vanilla, and egg until mixed.

In large bowl, with fork, mix oats, flour, sugar, almonds, wheat germ, chco chips,nuts n craisins , and salt until combined. (keep some chips aside,if you want to sprinkle on top)

With spatula, stir honey mixture into oat mixture until blended; scrape into prepared pan.

With wet hand, pat oat mixture evenly into pan.

Bake 30 to 35 minutes or until pale golden around edges. Cool completely in pan on wire rack, about 1 hour.(If its browning too much,like mine did,lightly tent it with a foil after 20 minutes)

When cool, transfer using foil to cutting board. Cut into pieces of rectangular/square shapes and store in tightly sealed container at room temperature up to 2 weeks. :)

I guess this can be an entry for some ongoing events..But I cant remember which n where..I searched,to no use..duh.. :(..So if any of you could please lemme know,it'l be helpful n I'll add it here..

Mughal Biriyani n some mesmerizing memories..!!

Hi..Hello..another weekend is here..Officially Google has proclaimed pompously the first day of spring n all,n I am hearing that many of you are already experiencing the bliss..Well..lucky you ..We are not yet blessed,its more than usual dark n raining here today n heard its going to be down pour on this weekend too..sniff..sniff..n ..some people thinks I am frozen crazy n needs some sun.. ;) he he..Not frozen actually..Drenched would be the apt word..n I see that Pappu has gained more attention than my pudding in the last post, I have passed on everything to him and now he is a proud barking pup.. :D

Coming to today's dish,a Mughal Biriyani,I have so many associated memories twirling inside my mind.Let me tell the courtesy first.This is a specialty of a restaurant called Kream Korner in our small Alleppey town,back in Kerala.I guess I have mentioned about this place in my posts before,as my favourite restaurant still,after being to so many exotic places. :) ..There was a feature about this restaurant n the food there in the last edition of Vanitha magazine,n they had given the recipe of their specialty dish,Mughal biriyani there.I am sure they might have not blurted out all the details and revealed their secret.The recipe was asking for some Garam Masala,n I guess that's where the secret lies,hidden.. :P..Ha..I was so pissed off that I dint have the finest quality Basmati rice with me..I did'nt quite know ,which one was the best,n I picked up one which was seemingly the best.But It turned out to be not what I expected. :(..Have to check out next time..Which one do you think is the best n buy for your kitchen??

I have so many loving n nostalgic memories associated with this place..Now this going to be a bit digressed.So all busy people,scroll down to the recipe.When we were kids,our most awaited month was know why..That is when the grand Mullackal temple Chirappu(festival) of 7 days is celebrated with all color n galore.Mullackal is a long street ,stretched in almost 5 kms,n the holy temple there is for Devi (goddess).Usually,when our X'mas exams are finished,the festival would start,and the whole street would be full of colors.Street would be decorated n busy with street vendors,with colorful bangles,rings,ladies stuffs ,then toys n plates n eatery nooks and what not..!! I used to buy so many lil things like these ,not only me,all gals would n then when school reopens,we all would proudly show off their new collection to each other..My all colorful memories are associated with this festival.We'd just die for the exams to finish,n then all evenings,we would rush to have fun..It just like total rush,n there wouldn't be an inch space in the street.Tourist's come to Alleppey in masses at this time.People walk all the way back n forth through the busy street,trying out n buying things from shops,eating fresh fried Bhaji's n pakoda's,and enjoying all the color around(This is the most fun time for guys,who get to see so many pretty gals at a time,without worrying about their dad n big bro's..he he).As for me,the best memory is the fragrance of hot popcorn's,the view of it spurting n popping out of the machine n filled into long plastic bags,still remains vivid in my mind.n also the picture of small bubbles floating all through the air(I used to fight with mom n dad for that small bubble maker,as they would refuse me, telling its for small kids)...During twilight time,the whole street would be lit with multi colored lights,n there would be these mixed noises of people,n kids' pom..pom's n the devotional songs n Ashtapadi's from temple,mixed fragrances of oil, Chandan,n popcorn n pakoda's, bubbles everywhere,n on the final night,colors in the sky too...Massive crackers would burst into the sky,producing so many colors that we would just yell out with joy..
At the end of the street,there is a nook n small entrance with the a board kream Korner,mostly unidentifiable for first-timers.But by the time you reach a Km away from the spot,the oh-so-tempting fragrance will hit you make your head turn towards it.Even though the entrance is almost hidden,once you reach inside its a vast space ,dim lit,with soft mellifluous tunes flowing from some unknown source, n full of mural n artistic paintings.At that time there were not much,but now they say it feels like you are more in an Art Gallery,than a hotel.This makes it the fav place of tourists and the tastes have no match.Everytime we kids use to fuss with our dad n mom to go there.Only problem was they took lil time to serve you,so that used to piss off the elders.But we were ready to wait for any long for the yummy food there.Honestly,I have not yet found any match for the Butter chicken they serve there.Many more in the list..Ha..all good ole' memories.Now no chirappu's n no gala's n no yum hot Bhajis or butter chicken's from KK..I am missing so many wonderful things..Now don't you think so?? December fun never ended there.On the final days of December there would be this Beach festival,starting at night n it goes on till early morning.We all ,cousins n elders n everyone,would go n sit on beach without any discrimination,n there would be these programs in stage.Famous singers n actors n all would come..Ganamela's(Concerts),dance, comedy shows...Non stop fun n none would even think of getting a wink of sleep..I still remember,even after Tsunami,there was beach fest,we went,all people were kinda scared ,still there was no end to fun.. :)

Woah..It went really sorry n thanks for being patient if you happen to go through it.Those are my most cherished n sweet childhood memories that I shared with you.. :) Lemme not waste more time n come to the recipe.But before that,

Am passing this on to all my blogger friends,its hard to jot down all your names,please take this after you comment me. :)

This dish,I guess is a new addition to their menu,as I have'nt had it from there.They used to have specials everyday n we used to go for those ,all the time.. :)

For Mughal biriyani of Ratnagiri people,as told in Vanitha,you need to:

Fry 1/2 cup of thinly sliced Onions,1 cup of of Cashews ,Raisins n 1 Tbsp Poppy seeds in ghee n keep aside.

Heat ghee+oil n add a ground mix of 1 inch ginger piece,3-4 large cloves garlic, 1/2 cup sliced pearl onions /shallots n 7 -8 green chillies into it n saute till raw smell goes.

Throw in 1 cup of sliced onions and saute till soft.

Throw in 1 cup of small pineapple cubes,a bunch of mint n cilantro,1 large tomato cubes,3 Tbsp yogurt,1 tsp turmeric powder,1 tsp Pepper Powder( I added 1 more tsp pepper and 1 tsp chilli powder to make it more spicy),3/4 cup fresh grated coconut,1 tsp Garam Masala n enough salt. Saute until the coconut is slightly browned.

Mix well ,saute for few minutes n add cleaned chopped 1.5 lbs chicken.

Saute well to mix the chicken with masala,transfer to cooker(if u did everything in pan),close the cooker and let the chicken cook.

Mean while in a heavy bottomed pan add ghee n roast whole spices(cloves,cardamom,cinnamon,bay leaves n curry leaves).

Add 1/2 C sliced onions,some cilantro+mint,1 tsp sliced pineapple, n salt.Saute well.

Add 2 cups of rice,fry for a minute,add double the amount water with a pinch of saffron and bring to a boil.

Simmer n close to cook.

When the rice is still lil moist ,remove it from heat and keep aside.

Take a big deep n hard bottomed pan and spread a layer of chicken masala.

Spread a layer of rice over it.

Sprinkle all the fried onions,poppy,nuts n raisins over it..Sprinkle a tad of Garam Masala or any biriyani masala u are using.

Spread rest of chicken gravy n rice over it and sprinkle some ghee over it.Close tight with a lid sealed with some Maida

If you are using oven like me,Place this vessel covered with a wet towel in oven n bake at 200 F for 45 minutes or more.

After the time,open n sprinkle on top with saffron n mix well.

Serve with raita ,pickle n pappad.I had some chicken gravy as side too.. :)
Verdict is :The taste is lil sweet n sour because of the addition of pineapple.Its not very spicy.I felt it in the first stage itself.So while cooking the chicken,I added lil more pepper powder and lil chilli powder too..So it was ok for me.Adjust it as per your taste.. :)

I dunno..Am in one of those blank modes today.Usually I start it like this,n one the way I get something to jot on,hang on to that,until when people get exasperated n tired and starts to think,it was better off if this girl was in her usual state.. :D..But am so glad when I read your comments,some of you telling that you enjoy my write-up's..Thanks ..for your time n kind words.. :)

Yesterday evening,snuggling lazy in the couch,with my pappu(pet robo scared of real ones. :D) and a cup of hot Chocolate mug,I just watched some fav scenes of Sleepless in Seattle for the umpteenth time .Had took the Dvd last day..I love the film ..n Tom Hanks..n Meg Ryan,now that's something quite obvious.Its not 'cos am living in Seattle and have been to all those places they show,the waterfronts,floating homes..There is something so cute n touchy about this film.Some people,I have heard, saying the movie is silly romance,chick flick n forgettable...But I neva felt so..Just hear the song "When I fall in love,it'll be forever..or I'll neva fall in love " ..Its so sweet n the lines are so deep.."In this restless world,where love is ended before its begun.."..Woah..!!..There are so many classy n cute scenes in the movie.One I love is when the Mom tells Annie(Meg),about how she met her husband,Annie's dad n fell in love with him and it was all like magic.She tells "..n he held my hand n at one point of time I looked down n I couldn't tell,which fingers were his n which mine..n it was like magic.." ..That's one of the most romantic lines I have ever heard.. :) There are many more similar mushy romantic dialogues,n of course hilarious ones too..Like how females cry easily over movies.One lady is whimpering over "An affair to remember",n then Tom n his pal starts sobbing,enacting how the bombs were laid n fires shot in "Dirty dozen" , n starts pulling the tissues..Man..That's so hilarious..!! gelakguling ..So if you have'nt yet seen the movie,which I seriously doubt ,has a chance,Please do..Its all about magic of love n how destiny makes u meet your love.If you believe in it,like I do,you gonna love it..!! if you are imagining my dreamy,smiling figure cuddled up,lost in some Utopian romantic world,you are all wrong..Am fit n fighting.. :P..The weather is as usual,like a naughty spanked kid standing with, a dull face n giving dirty look.I dunno when the Sun is gonna smile upon my poor place,when the spring is gonna bloom,buds n chirps all around..Am so so waiting.This has been a real long n dreary winter.. :(

So,I guess you have had enough for today,n I should come to recipe now.This chocolate pudding,I saw in delish,n the name was MOST CHOCOLATE PUDDING,so am putting the same as my title too.That one caught my attention n the next day was going to be the one that marked 6 months of our wonderful marriage(Now,it was a month back be precise on Feb 24,I forgot this post in draft).So I decided to give it a try then n there,n off I went to kitchen n got all chocolatey' dirty.. :D I was never a chocolate person,never one with a major sweet tooth,neither is Kutts..So I was happy that I wont get out of figure that way.But recently to my utter horror,I am starting to get a small sweet teeth n am starting to get kinda addicted to chocolates esply Cadbury's..oh..!! Scary no..I don wanna get fattt..cos am already exploiting all the other areas,like butter,cheese,sugar,meat fat..good lord..breathing hard,I need to put a control brake..Did I scare you too?? he he.. :D..Don't panic..You can indulge in this once in a while,n I swear am not lying when I say,this one will melt in your mouth.I was showing him to dig in this..just put a spoonful on you tongue n stay still..It'll melt on its own n tickle your taste buds.. Now the chocolatey' area of my brain is starting to give out a Beep Beep tone..Oh..!! :p

You need:
  • 1 bar (4-ounce) bittersweet chocolate, chopped(Of best quality,high cocoa content)
  • 2 Tbsp butter
  • 1 1/2 tsp vanilla extract
  • 1 3/4 cups milk
  • 3/4 cups sugar(I adjusted the amount with some honey)
  • 1/4 cup unsweetened cocoa
  • 3 Tbsp cornstarch
  • 1/4 tsp salt
  • 3 egg yolks
  • 1/2 cups whipped cream (optional)
  • 2 Tbsp chocolate shavings (optional)
  • Walnuts n craisins (optional)

Combine chocolate, butter, and vanilla in a medium bowl, and set aside.

Heat milk in a medium saucepan, and bring to a simmer.

Whisk sugar, cocoa, cornstarch, and salt together in a bowl.

Beat the yolks in a bowl, using an electric mixer set on medium, for 1 minute. Reduce the mixer speed to low, and add the sugar mixture. Beat together until it resembles wet sand.

Add half the hot milk, and whisk until blended. Transfer the cocoa mixture to the saucepan.

Cook over medium heat, while continuously whisking, until thickened -- about 8 minutes.

Strain into the bowl of chocolate. Let sit for 3 minutes before stirring smooth with a wooden spoon.

Pour into Ramekins and press a sheet of plastic wrap onto the surface of the pudding and chill for 2 hours before serving.

When serving top with whipped cream ,choc shavings,nuts n craisins.
Get imaginative n u can use anything for the topping..Fresh raspberries,cherries,crans anything.... :)

Palak Chole n Dry Gobi Manuchurian with Naan's (Garbanzo Beans in a spinach gravy n Cauliflower masala fry with Indian Bread..)..!!

Aargh..!!.Am tired after that long heading..:D..Hii everyone..Hope you all had a nice n sweet weekend. :)..Here as expected,Seattle showed its peevish nature.It was raining cats n dog this weekend. Sakshi called me up on Saturday morning,enjoying the warm Boston weather there.She checked the Seattle weather ,saw the wonderful situation here,laughed heads out,n called up to pity me,and asked me to get out with Poppy Kuda(Poppy is an Umbrella brand,back in Kerala)..I was so pissed off,not because its raining here,but more because its so sunny there..(hehe..:D) ,n out of that depression,went back n slept for an hour more..:D..To sum it all up, we just went for our usual eat-shop outings n it was fun.I mean,I dunno why I feel so happy,when I spend money n shop.. :P ..Am I a Shopaholic ? ..Not a big time one I guess..But I just love ,even to see those cute things, all gleaming n shining bright,sitting pretty in neat rows.You put me in one of those shops,go have dinner, sleep,bath,do all chores n come back.I'll still be happily there..:D ..More than seeing ofcourse,I love the smell n feel ,n when I unpack it at home,and arrange them neatly,in place,my heart brimming with joy.. :D You feel so too? n as I have told before,crockery is my latest addiction.I feel some serious depression,if I come back home after shopping,without at least one crockery item.So without any fail,this time too,I trotted back home proudly,holding some cute things in hand.There was this small fishie bowl,which caught the eye of the cashier gal,n she retorted seeing it "Omg..Its soo cute.." ,n I was like "yeah..".beaming with joy.. :)..(n all your condolence messages for my lovely lost glass in the last post,made me understand the weight of my loss,made me even more desp,n I searched a lot for that type..Couldn't get it though..:(..sobs..)..Then took some DVD's n rushed home..Aah..I saw this movie "Three kings" y'day..Dint like it much,(not my type),but I must say for the umpteenth time,George Clooney is a HUNK..!! :D

On Sunday,it was a funny climate.One moment,it was raining hard , n after a minute I saw sun shining bright n there was a beautiful rainbow.I shouted out of excitement,which made Kutts jump out of horror (He is getting used to it..:D..),n I ran crazy for the cam.I was about to take the pic,n the rainbow faded..duh..!!..When we went out too,it was crazy cold n raining,but the sun was so bright n we both were saying.."Its fox's marriage.."..:D (Got a feel that we are nuts?..:D..Actually,its a folklore story in our hometown,which says,if ever there is rain n shine together,it means its fox's marriage happening.. funny no.. :D) enough digressions about my weekend adventures.Coming to the foodie part,I made this combo for our dinner ,some 1 week back.I was so bored n alone that evening,getting so pissed off waiting for Kutts.So just thought of cooking up something new n interesting to keep myself normal.Then I saw this recipe in Vanitha,n thought of giving it a try.I love Chole's,n so I was not apprehensive about the outcome,n I get this feel of taste when I go through a recipe.So I was off for this one,n mean while I made the yummy crispy Dry Gobi Manuchurian which is Kutts' fav (He is a rice kid,so when I have to convince him with Roti's,I got to try real hard n tempt him so much..:D) n Naan's(I couldnt take pic of Naan's ,as it was cooking inside oven that time).So altogether it was a grand yum dinner for us.. :) ..The pics are not really good ,as I had to console him so much n take these in fuss.It was like 10 at night n we were both crazy hungry,but I dint want to miss these..!!

The original recipe of Ammu Mathew in Vanitha,is for Methi Chole.Obviously I dint have Methi's,so substitued with Palak for good.Also the recipe dint ask for chilli powder n Onions.Now I cant do without lil of kick,n oh how I love to munch onions..:D..
The verdict is: we both liked this so much.It has a quite distinct taste n flavor,unlike our usual masala dishes n its not often I give a 8/10 for a dish,(that too a Veg one) other than authentic Mallu Non veg ones.So you can sure trust me,n go try this one.. :)..Am sure Methi leaves is the bestest choice,but Palak will do really good too.. :)

For a yummy bowl Palak Chole you got to:

Pre-soak n Pressure cook 1 cup of Chole with salt n enough water(Don make it go mushy..should be somewhat firm).After opening the cooker,take 3 Tbsp of chole,mash while hot n keep aside.

Wash n chop 1.5-2 cups Palak(Spinach) n keep aside.

Dry roast 3 cloves,1/2 inch Cinnamon n 2 cardamoms ( I used the home made Garam masala,which has got some fennels n mace other than these 3)

Heat 1 Tbsp ghee in a pan n splutter 1 tsp Cumin seeds (I used 1/2 tsp cumin n 1/2 tsp the flavor of fennel)

Now add 1/4-1/2 tsp fenugreek powder n a 3/4 inch of cinnamon stick n saute well.

Now throw in 5 slit Green chillies and 1 tsp of minced Ginger(Added some(1/2 cup) sliced Onions here).Saute well for 5 mins,

Add 1/4 tsp Asaofetida ,saute n add the chopped Palak.Saute n mix well.

After the palak is cooked,add 1/4 tsp Turmeric Powder( I sprinkled some Chilli Powder here) and enough salt n saute to mix

Add 1 medium sized Tomato,chopped, into it,close the pan and let it cook.

When the tomato has gone soft,add the cooked Chole into it and stir to mix.

Pour a cup of water n cook in high for 4 minutes,stirring in between.

Now reduce the heat,close pan n cook for sometime..(7 mins or so..)

Open the lid,n add those 3 Tbsp of mashed chole into the gravy n stir to mix.

Add 3/4- 1 Tbsp of Tamarind paste ,stir n saute well to mix.

Now sprinkle the dry roasted Garam masala over the gravy,adjust salt n cook till the desired dryness is reached.

Garnish with cilantro.. :)

The curry smells so wonderful,n the fragrance of hinge n ginger n fenugreek (methi)will bowl you.Some people dont like Methi particularly,that's y I have mentioned the amount of methi powder as 1/4-1/2 tsp.But I just loved the flavor of this dish,n am going to make this again..Slurpp..:)

Now,you all know how to dish up that yummy Dry Gobi Manchurian,rite??:)

Just keep the 2 cups of cut Gobi florets immersed in boiling salt water for 5 mins.

Drench it in a marinade(adjust spices) of 2 tsp Chilli Powder,1/2-1 tsp Pepper powder,1/2 tsp Turmeric powder,1 Tbsp Ginger-garlic paste,1 Tbsp Soy sauce,1 Tbsp Chilli Sauce,1/2 Tbsp Ketchup,2 tsps lime juice,1 Tbsp Corn flour,2 Tbsp AP Flour,1 tsp baking soda n salt.
Keep it in fridge for an hour or so n fry in hot oil..yum..!!:)

The healthy Whole wheat Naan goes like heaven with these..So don forget to check that out..n please don't get eekss with the clumsy pic there.Its an old one,I'll update it soon..That is definitely a fool-proof recipe.. :)

Banana-Cocoa Soy Smoothie..!!

Again a weekend..!! Time has got wings or what..!!.It feels like , few days back only I posted my last Friday post,wishing you a great weekend.Its so full of shine here since a couple of days..warm n lovely,n when we are planning for an outing on weekend, says Seattle is gonna get peevish n rainy on weekend.Can you guess how irritated I am?Anyhow,we are not going to miss it this weekend..will take the umbrella n go get dirty.. :P

Thanks to everyone who suggested tips for increasing my blog speed.I have been on quite a research n did fix it up a little..I guess IE finds it difficult to open this,while Firefox is a winner.IE is so drag n slow for almost all sites.I quit it long long back.So all you who are still with IE,please do try Firefox,its tons better..!!

I made this drink last week,when it was cold n dreary.After that,my neighbors have a very good reason to think that I am nuts.I was trying to take the pics inside,n with the meager amount of light seeping in and the dark color of the drink,all I was getting was a lousy dark pic.So I had to make the settings in my balcony.Seeing my outdoor shooting in nearly 40 F(5 deg) , with outfits that are not so fit for the climate n my body flexing in weird positions,I dare not imagine what they might have had in mind.I thought I could wind up with 2 snaps,but then you know,my unsatisfied self did more job,n I barely managed to escape inside,before I got transformed into an ice-girl.. :D

..n I dedicate this post to the memory of that pretty glass..:D..yeah..its no more..!! Good that I was able to take at least one pic out of it.This was one I got in huge reduction(some 80 cents,mebe that's why,just one mild strike of it on my draw top made it go into pieces..:( ),along with that spice box n many other things from World market.Yeah..For all my dear readers,who loved my spice box n commented n mailed me about it,it was purchased from Cost Plus World Market.You can check it out online,but of course the price is more than double now..Also crockery crazy people like me can check out this dinnerware n much more at,which is another site I found interesting..:)

Coming to this pucca Vegan drink,(courtesy is to,its one with plenty of protein from both tofu and soymilk, n this banana-split-inspired breakfast smoothie will keep you satisfied until lunchtime.

You need:
  • 1 banana
  • 1/2 cup silken tofu
  • 1/2 cup soymilk
  • 2 Tbsps unsweetened cocoa powder
  • 1 Tbsp honey
Slice banana and freeze until firm.
Blend tofu, soymilk, cocoa and honey in a blender until smooth.
With the blender running, add the banana slices through the hole in the lid and continue to puree until smooth.

Easy no?Perfect for your breakfast n any snack time .Trust me,its so filling n good that you wont feel like nibbling on those unhealthy stuffs till the next meal time.. :)

Caribbean spiced shrimp with Pineapple Salsa..!!!

Caribbean Prawns w/ Pineapple Salsa

The word Caribbean brings to mind so many things..First among them is the festive n oh-so-brimming-with-energy tune "Ulalalla lelo..ulalalla lelo.." the one that made us all jump with joy,on one of those World Cup's..Do you remember that?But I had never had a chance to even peek into the cuisines of this wonderful place.It was only recently I saw Cynthia's place n awed at the yummy food there.. :)..We had gone to Mauritius couple of months back,a heavenly island similar to Barbados.Boy..we had so much fun..Its really a piece of heaven ,bestowed upon us graciously by Almighty!!..Talking about food,we did try out so many types of their food and one thing I must say is that,the dishes there are bursting with colors and flavor.All around the island,you can see colorama.Beach babes sipping colorful drinks n basking lazily in sun,greeny palms n bushes,emerald green n turquoise hues on the wide spread of crystal clear ocean,stunning colors of beach umbrella's n more colors on your plate..!!I dunno if the taste n dishes are same in Mauritius n Barbados..just reminiscing the sweet memories.rindu.sigh..!! (I am still nagging him to take me there again,but alas..there are no proper flight routes from here to there it seems..sedih)

Caribbean Prawns w/ Pineapple Salsa

So when I saw the theme of Meeta's MM,I was delighted n decided to try something of Caribbean cuisine,so that we both can munch on n imagine we are back in the heaven.jelir
But again,my lazy n forgetful self took over me,n I totally forgot about it until I recently saw too many Caribbean dishes sizzling everywhere in Blogger world,n gladly saw the deadline extended.So a relieved me started looking for some easy dishes n landed upon this one.Prawns is something I can eat,in any form.The recipe sounded easy n the combo of spices was promising n so flavorful.Allspice n curry powder were the missing stuffs in kitchen,which was luckily found out yesterday in grocery shop.So I put on the Chef's hat..err..I mean apron..n cooked up(I know,its not much of cooking..:D) this delicious prawns fry,sizzling with the aroma of Caribbean spices.I made the pineapple salsa too ( Prawns n pineapple r yum combo..remember my Prawn-pineapple fried rice??)which was great with its sweet n tangy feel.We delightfully dipped, the fresh hot prawns right from the Kadai,into the salsa and then into out mouths..mmmm..It was soo good.Call it a starter or side dish or whatever..Am happy that I made it..!

Caribbean Prawns w/ Pineapple Salsa

PS: Courtesy goes to .If planning to prepare this,try getting all the ingredients as each of them contributes to the flavor n taste of this yummy fry.Also,I have slightly increased the heat to suit our palate.

For Caribbean spiced shrimp,you need:

1 lbs shrimp/prawn
3/4 Tbsp paprika
1 tsp Jamaican curry powder(available in stores)
1 tsp ground cumin
3/4 -1 tsp ground allspice (available in grocery section)
1/2 tsp ground ginger(ginger powder or paste)
1/2-1 tsp ground coriander
1/4-1/2 tsp freshly ground black pepper
1/4 tsp ground fennel (optional)
1/8 tsp ground red pepper
olive oil

Combine all the spices ,make a paste n dredge the shrimps in it.
Fry in hot oil,flipping sides,till dark brown
Serve hot with Pineapple Salsa.

For Pineapple salsa:

Pulse 1/2 lbs cubed pineapple in a food processor,until finely chopped.
Mix it with 1/2 cup minced onion,some cilantro,1 tsp minced ginger,pepper powder,1/2 Tbsp lime juice,1 Tbsp honey n salt.

Sakshi is a person whom I met through this blogging,n am so glad I did.She is now a very close friend.Some of you might have sure noticed her long ,sweet n funny comments on my posts.She is not yet into food blogging(I hope I can push her into that soon..:P)..,but she takes amazing pics n writes even more amazingly..I swear!!..Guys n gals ..go check her out!!..She is so full of energy that ,she finds the best way to spend it by cooking atleats 10 dishes a day..gelakguling
