I have stayed away from Non-veg for long,even made a Vegan post..Now,I need a come back..How about a sinfully spicy Chicken Drumstick fry?The authentic Kerala one?Recipe is very easy,but I don't make it quite often due to you-know-why.Even though I do only shallow fry,I don't like including much fried stuffs in our diet.So this is a once-in-a-blue-moon indulgence.Really its a delight to the taste buds!!
Back when we were kids,Mom was just like me(not that much,I would say).She used to make this just once in a while,when we would be like utterly craving for them.We as kids used to fancy eating chicken legs ,holding them in hand and biting big mouthful,like we see in films..:D.This is a main item of Thattukada's (street food corner) too.The aroma that spreads when they deep fry this in big kadai ,is just divine..:)
This is a recipe from drafts.Means,a clumsy pic again..:p

Unlike deep frying,shallow frying needs more care,as there is a good chance for it to burn n stick to kadai,which attributes to black spots,like the one you may see in the picture.The Biriyani was being made on the other side ,you know..:P

Ingredients(For 2 Drumsticks)-Adjust the amounts for other Chicken pieces
A.
2 Chicken drumsticks cleaned,patted dry
B.
1 Tbsp Ginger n Garlic paste(Always make fresh paste.Here its a must,They are lot more flavorful than the store-bought ones.I think the latter are only ok for chinese dishes )
1/2 Tbsp Hot Chilli Powder
1 tsp Coriander Powder
1 tsp Pepper Powder
1/2 tsp Garam Masala (Cinnamon,cardamom,cloves,Fennel,Mace)
1/4 tsp Turmeric powder
1/2 Tbsp Lime juice
Salt
C.
1 cup sliced shallots/onions
Curry leaves
Oil
Method
Make slits on chicken legs and marinate it with ingredients under B(make a paste n marinate) and keep it for an hour or more .
In a Kadai,heat oil on high.
When sizzling hot,reduce to medium high and add the curry leaves.
Saute n infuse the pan aand oil with the aroma of them.
Now throw in the shallots and saute till they are slightly wilt.
Remove them with a slotted spoon n keep aside.
Place the chicken drumsticks in the hot oil and ocassionaly turn till they are dark brown on all sides.Adjust heat so that they are not charred n well cooked inside.
While the chicken is turning a shade of golden brown ,throw in the pre-fried shallots n curry leaves into the pan,n toss along with the drumsticks.
See to it that neither the chicken nor the onions are charred,turning n tossing in between..
