Tasty Chicken Cutlet..

Cutlets were always those delicious,crispy deep brown croquettes which used to smile invitingly at us from bakery glass counters,when we were kids.We used to nudge mom when we see that and munch it happily later.I never had a thought in my dreams that someday I'll be making it.Talking about Cutlets,again my favorite is Mutton Cutlet of ICH. I used to love it with the Onion-lime juice mix and tangy Tomato Sauce.I had seen the recipe in a cookery show back in India.But then,as we all know ,making a cutlet is a process that you'll get to master,only in course of time .First few attempts may end up as failure as the consistency of the mixture ,mainly affects the outcome.So I was little apprehensive about making this.But then I decided to give my luck a try..n ain't I soo happy..It turned out in perfect shape and was super delicious.Kutts usually never have Meat Cutlets ,but this time he loved it and had pretty many of them..:)


Ingredients (For 7-8 cutlets)

Chicken - 1/2 lbs
Onions sliced - 1/2 cup
Potatoes - 5-6 small cubes boiled and mashed
Green Chillies - 3-4 Nos:
Ginger-Garlic paste - 1 Tbsp
Pepper Powder - 1/2+ 1/2 tsp
Garam Masala - 1 /2 tsp
Egg - 1 Nos:
Bread crumbs - 3 Tbsp ( enough for coating)
Curry Leaves
Salt
Oil



Cook the chicken with Ginger garlic paste ,1/2 tsp pepper powder and little water .Take care not to overcook.Now take it out and mince it.A one second burst in Mixer would be fine.Don't overdo it.

Boil the potato cubes,mash and keep aside.

Take a pan.Heat oil and add curry leaves.Now Saute the onions,chillies and add rest of pepper powder ,salt and Garam masala.

Once everything is saute'd well add the mashed potatoes.Saute again well.You can spice up with more garam masala/pepper powder at this stage.Now add the minced chicken and saute everything nicely,till all of them are mixed and combined well.

Keep it aside for cooling.

After cooling,roll the mix into oval shaped pieces.You should use your hand here.Now,if the amount of mashed potatoes is less the pieced won't remain so and there is a fair chance that it break.You can add a bit of mashed potatoes if its so,which will add to consistency.Now coat the rolls in Egg and in Bread crumb mixture.The roll should be evenly coated , pat off excess bread crumbs.

Heat oil in a deep bottomed pan .When oil is piping hot,drop rolls into it giving space for each of them.Don't crowd the pan.Flip each side and fry well..:)


This tastes heaven with Tomato sauce/onions mixed with Lime juice n salt.

This can be made with any meat,egg or fish.

All my veggie friends can skip the meat part and do this with onion n potatoes alone.Also you can add cooked peas/moong dal mix to make your cutlets yummy n nutritious..:)

Varsha, live the non foodie name. Maybe it will inspire you to write about the 'random' things you mentioned along with chicken cutlets and such :)
