Onion Fritters..(Nadan Ulli Vada)

Week days have become fast moving now.Work,blog,shopping and some of our sweet idle moments are filling life beautifully.Most of the days ,by the time he reach home after his tight office schedules,it'l b 7 or 8.Still ,he loves to have his hot tea with some crunchy "murukku"or jack fruit chips or something like that.He is a big fan of these light crispies.One evening I noticed the packet empty .Forgot to shop it last time..duh..!!..what to do..Dal Vada is his fav,but that needs a pre-soaking of 2-3 hrs..Hmm and then the idea of this age old crispy "ulli Vada" came to mind.The foremost barrier that hinders me from making these evening snacks is the consumption of oil.I never like using too much of oil in any dish,so skips deep fries n all ,as much as possible.But an indulgence ,once in a while never matters rite.:P..So here you go..


Onions Thinly sliced 1 cup
Green chillies roundly sliced 2-3
Curry leaves A sprig
Gram Flour 1/2 cup
Red Chilli Powder 2 Tbspoon
Hing 1 Pinch
Pakora Masala 1 Tspoon
Corn Flour 1 Tbspoon

Make a mixture of all these ingredients(except oil).The mix should neither be too loose nor too dry.Heat Oil in a deep bottomed pan.Oil should be really hot,and then you are ready to drop a spoonful of the mix into it.Add mebe 2 more spoonful's into it.The pan shouldn't be too crowded.Separate each Vada without sticking to each other,flip the sides n fry dark brown.Take out and drop into a tissue paper to drain out excess oil.
Serve with some hot sauce or ketchup.
