Brand Hot Kozhikodan Chicken Biriyani..:)

Note : Please refer my Malabar Biriyani for more tips n elaborations..:)
I guess Biriyani is that one dish,which you can make in "n" different ways,and sure the taste also varies as such.Since the time I was a kid,I always had this dish topping in ma fav's list.My mom used to make it in different ways,most of them,which I now think was easy.But nevertheless it tasted heaven to me n ma lil bro.n it was something that was always reserved for special occassions,like b'days or something.So biriyani was always considered as special dish.As far as a "cook" of me is considered,I never hesitate from straining hard for making something tasty n special.For that I am always ready to cut the easy routes and put some extra effort..:p..wish I had this mentality for everything..sigh..:D.So about biriyani,like ma mom,I also prepare it rarely,n if I do ,I always see to it that it is special..:)
Last week for my sweetheart's b'day I made this biriyani.My reference..hmm..I dunno..This recipe evolved from many other recipes that I have went through at many times..So Thanx to all those pals..:)

PS: This may appear to be lil long n difficult,But trust me at the end it's worth it n u wouldn't want to miss those special "looks" from ur lovies no..;)



Basmati rice 1.5 cups
Cloves,Cinnamon,
Cardamom,Bay leaves As required,2-3 of each
Ghee 2 Tspoon
Onions thinly sliced 1/2 Cup
Salt As needed
Water



Chicken 1.5 lbs/3/4 kg
Onion sliced 3 cup
Tomato 1 cup
Green Chillies 4-5
Red Chilli powder 1 Tbspoon
Coriander Powder 1.5 Tbspoon
Turmeric Powder 1 tspoon
Black Pepper powder 1/2 Tbspoon
Garam masala Powder 1+1/2 tspoon
Ginger garlic paste 1.5 Tbspoon
Curd 1/2 Csalt
Oil
Nuts and Raisins
Coriander Leaves
Mint leaves


Marinate the chicken with half quantity of the powders,1 Tbspoon ginger garlic paste,curd,all leaves,salt and keep refrigerated as long as u can(preferably overnight).
To prepare biriyani rice,take a deep bottomed vessel.Add ghee followed by the whole spices.Once a nice smell comes,add Onions and salt.Saute well.Once it turns pink,add the rice and add double the amount water.When bubbles appear,lower the heat and close the vessel.After sometime,water will be dried and rice will be almost cooked.Try the rice with a fork.If each grain can be separated,then rice is ready for biriyani.Time-to-time check is needed when preparing rice.
Meanwhile in another pan pour some oil.Saute onions,curry leaves,some whole spices and 1 Tbspoon ginger garlic paste with salt.Once it turns pink,add rest of powders and saute nicely.When it turns into a gravy form,add chopped tomatoes and saute.
Add the marinate chicken,saute well.Close the lid and let the chicken cook.After some 15 mins you'll get chicken with some thick gravy.Sprinkle lil more pepper powder and garam masala powder on top.Add Coriander,mint leaves and Saute again.Chicken gravy is ready.
You can saute some onions,cashew nuts and raisins in ghee separately.
Take a deep bottomed vessel.Cooker will be sufficient.Add some ghee to the pan,to make sure that rice dont stick to the bottom.Add one layer of rice.Then add some fried onions,nuts,raisins.Then add Chicken pieces with its gravy.Add rice on top of it.In this way fill the cooker vessel to the top.a thin layer of rice should be on the top.Sprinkle some ghee and rose water over it and close the lid.If you can make sure that no air escapes from within the vessel,then that'd be the best,You can close the sides of the lid with the some dough for that.Then bake the whole thing under low flame for some 30 mins or more.This is the tricky part of biriyani making..During baking,the essence of chicken and gravy seams through rice and makes the whole thing slurpyy..:P
Open just before serving.Delicious biriyani will be ready to be served wit the some salad and pickle.
