Beans with Roasted Coconut Mix..(Beens Thoran)

I love Beans,so do my sweetheart.Whenever we go for a veggie shopping the first thing that goes into basket is Beans.So ,most of the days,beans make it to our veggie side dish.It easily becomes tender and tastes really good plus super nutritious too.Back during ma school days beans was always presented in "with or without coconut"(thoran/mezhukupuratti) form by ma mom.This dish is inspired by the former.It tastes really superb n makes an excellent side dish with hot rice n a main curry.


Beans 1 pound
Coconut flaked 1/2 cup
Small Onion sliced 2-4(If using big onions then 1/4 cup)
Curry leaves 5-6
Mustard seeds 1 Tbspoon
Fenugreek seeds 1/4 Tbspoon
Urad dal 1 Tbspoon
White rice 1 Tbspoon
chilly Powder 1 Tbspoon
Pepper powder 1/4 Tbspoon
Whole Red Chillies 2
Salt
Oil



Take a pan.Pour some oil and saute thinly sliced beans.Keep it aside.Then in the same pan,Add some more oil and temper with mustard seeds,followed by Fenugreek seeds,Urad dal n White rice.After sauting for some 15 sec,add curry leaves n whole red chillies.Saute for a few seconds n add sliced onions.Saute under low heat till onios turn pink.Then add coconut flakes n roast till the whole mixture turns light brown.Then make a heap of the whole thing in the centre of pan and pop down the half cooked beans on top of it,so that it full covers the roasted mixture.lower the heat and close the pan.Let it be so for some 10 mins.Open the pan,increase heat and mix the whole thing.Saute for a few minutes.I bet u'l be bowled by the nice smell now..:p..Now add Salt, chilli powder n pepper powder and stir for 2 more minutes.Now switch off the pan n devour the awesome dish..!!!
